Swedish Rice Pudding

2/3 cup long grain white rice
1-1/3 cups water
1 teaspoon salt
1 cinnamon stick
3-1/2 cups milk
2 tablespoons granulated sugar
1/3 cup whipping cream

Stir together the rice, water and salt in a saucepan. Add cinnamon stick. Bring to a boil, lower heat to low, cover and simmer for 10 minutes. Stir in milk. Bring the rice to a boil again and simmer on low for 40 minutes, covered. Do not stir until the rice is thoroughly cooked. Gently fold in sugar and whipping cream.
