Meaty Vegetable Rice Casserole
Preparation: 10 minutes
Cooking time: 1 hour
2 slices bacon, cooked and cut into small pieces
1/2 pound (250 g) lean ground beef
salt and pepper
1 cup long grain white rice
1 medium onion, chopped
1 (10-ounce or 284 ml) can mushroom slices, drained
1 (28-ounce or 795 ml) can whole tomatoes
1 green bell pepper, chopped
1/2 cup shredded cheese of choice
Pre-heat oven to 300 F. Spray an 8-inch square baking pan with non-stick cooking spray. Scatter the bacon bits in the bottom of the pan. Pat in the ground beef. Lightly sprinkle with salt and pepper. In layers, add the rice, onion, mushrooms, tomatoes (with juice) and bell pepper. Top with shredded cheese. Bake 1 hour.
