Tomato and Onion Rice

2 tablespoons butter or margarine
1/4 cup finely chopped onion
1 1/2 cup tomato juice
1/2 tsp. salt
1-1/2 cup white rice
1 tomato, diced
parsley
1/2 green bell pepper, diced

Melt the butter in a pan over medium heat. Fry in the onion and green bell pepper until they are golden. Incorporate the tomato juice and salt. Bring to a boil and stir in the rice and parsley. Cover and set aside for another 5 minutes.
