Spanish Brown Rice

1 cup of pre-cooked brown rice
2 tbs. of olive oil
1 large finely sliced Spanish onion
28 ounce can of diced tomatoes with herbs
Add more spices to taste

Over medium heat, saute the onion slices in heated oil until they become golden and soft. Stir in the tomatoes and spice to taste.

Incorporate the rice for a few minutes until everything is warm and ready to serve.
