Maple Rice with Green Apples

This holiday dish is excellent as a side dish with a Christmas ham.

Makes about 10

1/2 cup extra virgin olive oil
2 medium onions, finely chopped
2 red bell peppers, diced
1 cup maple syrup
2 cups white wine
8 cups chicken bouillon
4 cups basmati rice
salt and pepper to taste
8 Granny Smith apples, cut into small cubes

In a large stock pot heat the oil over high heat. Add the onion, red pepper and maple syrup and heat for 7 minutes. Lower heat and deglaze with wine, then reduce until the pan is almost dry, stirring occasionally. Add the bouillon and bring to a boil; add rice. Cover and cook for 20 minutes or until the rice is tender. Salt and pepper to taste, then stir in apples.
