Spinach and Rice au Gratin Recipe

Makes about 6

3/4 cup uncooked long grain white rice
1 large egg
2 cups cooked spinach, drained and chopped
3 tablespoons butter
3 tablespoons all-purpose flour
1-1/2 cups milk
1/2 cup American cheese, cut into small pieces
1/4 cup diced red bell pepper
salt and pepper to taste

Pre-heat oven to 350 F. Mix together rice, egg and spinach; set aside. In a saucepan melt butter; add flour and cook for 2 minutes, stirring occasionally. Slowly stir in milk, then add cheese. Stir constantly for about 10 minutes or until cheese is melted and mixture has thickened slightly. Add spinach mixture and chopped pepper. Spray a 9x13" baking dish or similarly sized casserole with non-stick cooking spray. Pour mixture into prepared dish and bake for 1 hour.
