2 slices of bacon, cooked and crumbled
1/2 pound lean ground beef, browned
salt and pepper to taste
1 cup long grain white rice
1 medium onion, chopped
1 (10-ounce) can sliced mushrooms, drained
1 (28-ounce) can tomatoes
1 green bell pepper, chopped
1/2 cup grated cheese (cheddar, mozzerella, monterey jack or your favorite cheese)
Pre-heat the oven to 300F. Place the bacon in an 8" square baking pan. Top with ground beef. Salt and pepper to taste. In successive layers, add the rice, chopped onion, mushrooms, tomatoes and green pepper. Top with grated cheese. Bake 1 hour.
