1 cup sliced celery
3 tablespoon diced onion
1/4 cup butter
1 cup water
1/2 cup orange juice
1/2 teaspoon salt
1/2 teaspoon sugar
1.5 cup pre-cooked minute rice
1 teaspoon orange zest
freshly ground pepper
Saute onion and celery in the butter until the vegetables are soft. Stir in the water, orange juice, salt and sugar. Bring to a boil and stir in the already cooked rice. Cover and set the mixture aside for 5 minutes. Add the grated orange zest and stir delicately with a fork. Serve.
