Greek Rice with Pork Sausages Recipe

Makes about 4

1 cup long grain rice
1 tablespoon butter
1 tablespoon finely chopped onion
1-1/2 cup chicken broth
1/2 teaspoon chervil
1 pinch thyme
1 bay leaf
1 tablespoon vegetable oil
2 pork sausages
salt and pepper

Pre-heat oven at 350F. Boil sausages for 5 minutes over high heat. Drain and set aside. Rinse rice under cold water. Drain and set aside. In a casserole, melt butter at medium heat and fry in the onions for about 3 minutes until golden. Incorporate the rice and cook while stirring for another 3 minutes. Add in the chicken broth and spices. Cover and let bake for 10 minutes in the oven. Finely slice the sausages. Add the sliced sausages to the mixture and let bake for another 10 minutes in the oven.
