Spicy Spanish Rice with Monterey Jack Cheese

Makes about 8

3 cups cooked rice
1 cup diced tomatoes
1 large onion, chopped
1 large green pepper, chopped
2 cloves garlic, minced
1 tbs. vegetable oil
1 tsp. chili powder
1 tsp. cumin
4 celery ribs, diced
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
1/2 cup grated cheese (Monterey jack)

As mentioned in the ingredients, prepare and cook the white rice as a first step. Then fry and sauté the onion, celery, garlic and green pepper in the vegetable oil until soft. Then add the tomatoes and oregano for a few minutes. Then stir in the spices (cumin, chili powder). Evenly sprinkle the cheese on top of the rice mixture for a few minutes until it melts then serve.
