Tomato and Garlic Rice

This makes a very nice low fat side-dish.

Makes about 4

1 finely chopped large tomato
1 minced clove of garlic
1 cup of uncooked rice
1 tablespoon minced scallion
2 cups chicken broth
1/4 tsp. ground black pepper
1/2 cup corn kernels (optional)

In a saucepan, heat 1/4 cup of chicken broth. Stir in the rice and cook for about four minutes. Incorporate the black pepper and remaining broth while stirring. Let the mixture come to a boil the lower the heat and simmer for about 15 minutes.

Add the scallion and optional corn and let cook for another 5 minutes. Stir in the tomatoes to warm these up in the mixture. It is now ready to serve.
